- 5/6 large potatoes
 - 1 large red onion
 - 1 large chorizo sausage
 - 2 cloves of garlic
 - 1 teaspoon of smoked paprika
 - 1 teaspoon of oregano
 - 5 eggs
 - 1 ball of mozzarella cheese
 - 400g (more or less) sun-dried tomatoes
 - 200g grated cheddar cheese
 - A handful of basil leaves, chopped finely.
 
I?ve been doing this for years; when my parents work all day and come home around tea-time, I?ll make it for when they arrive to save them doing something. My dad says it?s the only thing I can cook, but that surely means that I do it well! Anyhow, here is the recipe for one I made earlier this week. This particular combination gives a rich meaty Italian taste, which I love, but you can chop and change the ingredients completely with this dish to suit your own taste. But remember there are three main components that are always the same: potato, egg and cheese.
